Winding down the week is a Kugel.
I remember when I was a child, I ate at a friend's house. Her, being Jewish, became a source of wonder for me, about her holidays and mostly her food.
One night we had a noodle kugel.
It was sweet and eggy and noodily, had a funny name (you know 8 year olds) and had raisins and nuts in it.....but, but Mommy...
it was not a dessert.....
It was WONDERFUL.
Is it my memory making things better then they really were or can a kugel be that good?
I have made a few over the years, nothing I was doing cartwheels around the house over.
This one sounded promising. Not only because of the sweet potatoes, but the apricot jam and the nut topping.
Maybe this one was THE one?
I served a spinach salad with this.
Sweet Potato Noodle Kugel
serves 6
Ingredients
* 8 ounces egg noodles made for Passover
* 1/4 cup butter
* 2 medium sweet potatoes (1 1/4 pounds), peeled and grated (about 4 cups)
* 2 large eggs
* 2 large egg whites
* 1/2 cup reduced-fat sour cream
* 1/2 cup apricot jam
* 1 teaspoon salt
* 1/4 cup chopped pecans, toasted
Preparation
1. Preheat oven to 350°.
2. Cook noodles according to package directions; drain and rinse with cold water. Drain again, and set aside.
3. Meanwhile, melt butter in a large nonstick skillet over medium heat. Add the sweet potatoes; sauté until tender, 8 minutes. Let cool 5 minutes.
4. Beat together eggs and egg whites in a large bowl. Add sour cream, jam, and salt; mix well. Add the sweet-potato mixture; mix well. Stir in noodles. Transfer mixture to an 8-inch square glass baking dish that has been coated with nonstick cooking spray; cover dish with foil.
5. Bake 30 minutes or until heated through. Top with pecans; let stand for 5 minutes before serving.

Review: This was good as kugel goes, very tasty, but it still isn't what I expected. I am beginning to think that everything has been lightened and healthified to death, and the old time recipes, especially the good Jewish ones are all but gone. I will keep searching because I do not think that a kugel, new or grammy's were all that fattening in the long run.
