Pickled Red Onions

My wish list has one less recipe on it.

When The Nudge liked the pickled onions on his steak while in Key West, I immediately put them on the list.

Lots of recipes out there for pickled onions. There are the Asian recipes, the Mexican recipes, the English-style recipes, the Indonesian recipes and the Jewish recipes.

Best to read them all and pick out the spices that you know you will like. There really is no set rule on making pickled onions.

Depends how sweet, sour or spicy you want them and what you plan on serving them with.

The onions on his steak were sweet/spicy and less vinegary than most.
I made mine simple.

White vinegar
Granulated sugar
Cinnamon stick
Star anise
Cloves
Bay leaf
Hot red pepper

Done.

I am planning on serving them with a Mexican Crusted Rib Eye.
